This recipe offers a balanced meal rich in plant-based proteins and fiber, flavored with aromatic Indian spices and fresh vegetables. It is vegetarian and can be made vegan by using plant-based yogurt.

Frankie Bowl (Spiced Indian-Inspired Bowl)

Ingredients:
For the Bowl:

  • 1 cup cooked rice or noodles
  • 1 cup chickpeas, cooked or canned (rinsed and drained)
  • 1 potato, diced small
  • 1 small red onion, thinly sliced
  • 1 medium tomato, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup shredded lettuce or spinach
  • 1/4 cup fresh cilantro, chopped
  • 1 green chili, finely chopped (optional, for heat)
  • 1 teaspoon chaat masala
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1 tablespoon vegetable oil

For the Yogurt Sauce:

  • 1/2 cup plain yogurt (can use plant-based yogurt for vegan option)
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin powder
  • 1 teaspoon fresh mint, chopped (or 1/2 teaspoon dried mint)
  • Salt to taste

Optional garnish:

  • Sev (crispy Indian noodle snack)
  • Pickled onions or mango chutney

Directions:

  1. Begin by heating oil in a pan over medium heat. Add the cumin powder, turmeric powder, paprika, and garam masala. Stir well to toast the spices for about 30 seconds.
  2. Add the chickpeas and potatoes to the pan and toss them with the spices. Cook for 5-10 minutes until the diced potatoes are cooked and chickpeas are slightly crispy. Add salt to taste. Remove from heat.
  3. In a small bowl, mix the yogurt, lemon juice, cumin powder, chopped mint, and salt. Adjust seasoning according to taste.
  4. Assemble the bowl: Place a base of cooked rice or noodles in a bowl. Top with spiced chickpeas and potatoes, sliced onions, diced tomatoes, cucumber, and shredded lettuce or spinach.
  5. Drizzle the yogurt sauce over the bowl.
  6. Garnish with fresh cilantro, chopped green chili if desired, sev, and/or pickled onions or mango chutney for an authentic Indian street food touch.
  7. Serve immediately and enjoy!
