Ingredients

  • ¼ cup crumbled feta cheese
  • 2 tablespoons tzatziki sauce (store-bought or homemade)
  • Juice of half a lemon

Directions

  1. Preheat a grill pan or outdoor grill over medium-high heat.
  2. In a small bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Coat the chicken breasts evenly with the mixture.
  3. Grill chicken for 5-7 minutes on each side, or until fully cooked (internal temperature of 165°F/74°C). Remove from heat and let rest for 5 minutes. Slice into thin strips.
  4. Warm the whole wheat tortillas individually on the grill or in a dry skillet until pliable.
  5. Lay a tortilla flat, spread 1 tablespoon of tzatziki sauce down the center. Layer with a handful of baby spinach, cucumber slices, tomato, grilled chicken strips, and sprinkle with crumbled feta cheese.
  6. Squeeze a little fresh lemon juice over the filling for bright flavor.
  7. Fold in the sides of the tortilla and roll tightly to enclose the filling. Repeat with remaining wraps.
  8. Optional: Slice wraps in half and serve immediately, or wrap tightly in foil or parchment paper for a portable lunch.
