Vegan Red Lentil Soup

Red Lentil Soup Recipe

Ingredients:

  • 2 Carrots, chopped fine
  • 2 Onions, chopped fine
  • Fresh ginger, grated
  • Cooking oil
  • Curry powder to taste ~ about 1 Tsp
  • 2 Cans diced tomatoes
  • 1 Can dried red lentils (use tomato can to measure)
  • 2 Cans water
  • 1 Can coconut cream
  • Salt and freshly ground black pepper, to taste

Directions:

  1. Chop carrots and onion, grate ginger. Sauté with oil in large saucepan, about 5 minutes. Add Curry powder and fry 2 more minutes until golden.
  2. Add tomatoes, water and lentils. Turn down heat and simmer for 15 minutes, or until lentils are cooked.
  3. Add can of coconut cream and stir until heated through.

  • Fiber: 12 g

Serve with flatbreads.
