Apple Cinnamon Granola

This granola is naturally sweetened and free from refined sugars. It’s perfect for breakfast with milk or yogurt, or as a healthy snack. The dried apples add chewy fruitiness which harmonizes with the warm cinnamon spice for a classic fall-inspired flavor.

Apple Cinnamon Granola

Ingredients:

  • 3 cups old-fashioned rolled oats
  • 1 cup chopped unsweetened dried apples
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/3 cup pure maple syrup or honey
  • 1/4 cup coconut oil, melted (or any neutral oil)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened shredded coconut (optional)
  • 1/2 cup golden raisins or dried cranberries (optional)

Directions:

  1. Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, dried fruit, nuts (if using), cinnamon, nutmeg, salt, and shredded coconut.
  3. In a separate small bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet mixture over the dry ingredients and stir thoroughly, ensuring all oats and fruit are coated evenly.
  5. Spread the mixture evenly on the prepared baking sheet in a thin layer.
  6. Bake for 20–25 minutes, stirring halfway through to ensure even toasting, until the granola is golden brown.
  7. Remove from the oven and let cool completely on the baking sheet. It will crisp up as it cools.
  8. Store in an airtight container at room temperature for up to 2 weeks.
