Apple Cinnamon Granola
Ingredients:
- 3 cups old-fashioned rolled oats
- 1 cup chopped unsweetened dried apples
- 1/2 cup chopped walnuts or pecans (optional)
- 1/3 cup pure maple syrup or honey
- 1/4 cup coconut oil, melted (or any neutral oil)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1/2 cup unsweetened shredded coconut (optional)
- 1/2 cup golden raisins or dried cranberries (optional)
Directions:
- Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, dried fruit, nuts (if using), cinnamon, nutmeg, salt, and shredded coconut.
- In a separate small bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract until well combined.
- Pour the wet mixture over the dry ingredients and stir thoroughly, ensuring all oats and fruit are coated evenly.
- Spread the mixture evenly on the prepared baking sheet in a thin layer.
- Bake for 20–25 minutes, stirring halfway through to ensure even toasting, until the granola is golden brown.
- Remove from the oven and let cool completely on the baking sheet. It will crisp up as it cools.
- Store in an airtight container at room temperature for up to 2 weeks.
