Frankie Bowl (Spiced Indian-Inspired Bowl)
Ingredients:
For the Bowl:
- 1 cup cooked rice or noodles
- 1 cup chickpeas, cooked or canned (rinsed and drained)
- 1 potato, diced small
- 1 small red onion, thinly sliced
- 1 medium tomato, diced
- 1/2 cup cucumber, diced
- 1/2 cup shredded lettuce or spinach
- 1/4 cup fresh cilantro, chopped
- 1 green chili, finely chopped (optional, for heat)
- 1 teaspoon chaat masala
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 tablespoon vegetable oil
For the Yogurt Sauce:
- 1/2 cup plain yogurt (can use plant-based yogurt for vegan option)
- 1 tablespoon lemon juice
- 1 teaspoon cumin powder
- 1 teaspoon fresh mint, chopped (or 1/2 teaspoon dried mint)
- Salt to taste
Optional garnish:
- Sev (crispy Indian noodle snack)
- Pickled onions or mango chutney
Directions:
- Begin by heating oil in a pan over medium heat. Add the cumin powder, turmeric powder, paprika, and garam masala. Stir well to toast the spices for about 30 seconds.
- Add the chickpeas and potatoes to the pan and toss them with the spices. Cook for 5-10 minutes until the diced potatoes are cooked and chickpeas are slightly crispy. Add salt to taste. Remove from heat.
- In a small bowl, mix the yogurt, lemon juice, cumin powder, chopped mint, and salt. Adjust seasoning according to taste.
- Assemble the bowl: Place a base of cooked rice or noodles in a bowl. Top with spiced chickpeas and potatoes, sliced onions, diced tomatoes, cucumber, and shredded lettuce or spinach.
- Drizzle the yogurt sauce over the bowl.
