Grilled Mediterranean Chicken Wraps
Ingredients
- 2 large boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 4 whole wheat tortilla wraps (8-inch)
- 1 cup baby spinach leaves
- 1 medium cucumber, thinly sliced
- 1 medium tomato, diced
- ¼ cup crumbled feta cheese
- 2 tablespoons tzatziki sauce (store-bought or homemade)
- Juice of half a lemon
Directions
- Preheat a grill pan or outdoor grill over medium-high heat.
- In a small bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Coat the chicken breasts evenly with the mixture.
- Grill chicken for 5-7 minutes on each side, or until fully cooked (internal temperature of 165°F/74°C). Remove from heat and let rest for 5 minutes. Slice into thin strips.
- Warm the whole wheat tortillas individually on the grill or in a dry skillet until pliable.
- Lay a tortilla flat, spread 1 tablespoon of tzatziki sauce down the center. Layer with a handful of baby spinach, cucumber slices, tomato, grilled chicken strips, and sprinkle with crumbled feta cheese.
- Squeeze a little fresh lemon juice over the filling for bright flavor.
- Fold in the sides of the tortilla and roll tightly to enclose the filling. Repeat with remaining wraps.
- Optional: Slice wraps in half and serve immediately, or wrap tightly in foil or parchment paper for a portable lunch.
