Soft Beef Tacos
Ingredients:
- 1 lb (450 g) ground beef (preferably 80% lean)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional for heat)
- ½ cup tomato sauce (or crushed tomatoes)
- ⅓ cup beef broth or water
- 8 small soft flour tortillas (use soft corn tortillas to make this recipe gluten free)

Directions:
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
- Stir in chili powder, cumin, paprika, oregano, salt, black pepper, and red pepper flakes (if using). Mix well to evenly coat the meat.
- Pour in tomato sauce and beef broth (or water). Stir to combine and reduce heat to low. Simmer for 5-7 minutes until the mixture thickens slightly.
- While the beef filling simmers, warm the tortillas either in a dry skillet for 30 seconds per side or wrap in foil and heat in a 350°F (175°C) oven for about 5-7 minutes.
- To assemble, spoon the savory beef mixture onto each warm tortilla. Add your preferred toppings.
- Serve immediately with lime wedges on the side.
