Soft Beef Tacos

Ingredients:

  • 1 lb (450 g) ground beef (preferably 80% lean)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional for heat)
  • ½ cup tomato sauce (or crushed tomatoes)
  • ⅓ cup beef broth or water
  • 8 small soft flour tortillas (use soft corn tortillas to make this recipe gluten free)

  • Diced tomatoes
  • Shredded cheddar cheese
  • Sour cream
  • Avocados
  • Salsa
  • Corn
  • Black beans
  • Sliced jalapeños
  • Chopped cilantro
  • Lime wedges

Directions:

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  4. Stir in chili powder, cumin, paprika, oregano, salt, black pepper, and red pepper flakes (if using). Mix well to evenly coat the meat.
  5. Pour in tomato sauce and beef broth (or water). Stir to combine and reduce heat to low. Simmer for 5-7 minutes until the mixture thickens slightly.
  6. While the beef filling simmers, warm the tortillas either in a dry skillet for 30 seconds per side or wrap in foil and heat in a 350°F (175°C) oven for about 5-7 minutes.
  7. To assemble, spoon the savory beef mixture onto each warm tortilla. Add your preferred toppings.
  8. Serve immediately with lime wedges on the side.
