Red Lentil Soup Recipe
Ingredients:
- 2 Carrots, chopped fine
- 2 Onions, chopped fine
- Fresh ginger, grated
- Cooking oil
- Curry powder to taste ~ about 1 Tsp
- 2 Cans diced tomatoes
- 1 Can dried red lentils (use tomato can to measure)
- 2 Cans water
- 1 Can coconut cream
- Salt and freshly ground black pepper, to taste
Directions:
- Chop carrots and onion, grate ginger. Sauté with oil in large saucepan, about 5 minutes. Add Curry powder and fry 2 more minutes until golden.
- Add tomatoes, water and lentils. Turn down heat and simmer for 15 minutes, or until lentils are cooked.
- Add can of coconut cream and stir until heated through.
